What's happening?
What is stuck to an old oven is not grease any more. Fat that has been through repeated cycles above about 200°C polymerises — it cross-links into a hard, varnish-like carbon layer that is chemically nothing like the oil that landed there. That is why degreaser does nothing: it is formulated for fat, and this is a plastic. It has to be softened by a caustic product with dwell time, or dismantled and dip-tanked, and then lifted rather than scrubbed. It also matters where it is. Grease on the oven base and door glass is a cleaning job. Grease left to build in the extractor above, or inside a self-cleaning catalytic liner that has been sprayed with caustic cleaner, becomes a fire risk and a repair respectively.
What usually causes it?
- Fat spitting from roasting and repeatedly baking on above 200°C until it polymerises
- Spills left through several cooking cycles instead of being wiped while the oven is warm
- Cooking without a lid, tray or foil liner so fat reaches the element and the roof of the cavity
- Grease drawn between the door glass panes, where nothing reaches it without dismantling
- Carbon building on the fan housing and the element, so the oven smokes when heated
- A catalytic or pyrolytic liner damaged by an aftermarket caustic spray, so it no longer self-cleans
- Racks, shelf runners and grill pan left uncleaned so they recontaminate the cavity
Is it dangerous?
Heavy carbon build-up smokes and can ignite — cooking is the most common cause of accidental house fires in the UK, and a greasy oven and grill are part of that picture. The cleaning is the other risk. Domestic and professional oven cleaners are strongly caustic, cause chemical burns and permanent eye damage, and must never be mixed with anything acidic or bleach-based. Working in an unventilated kitchen without gloves and eye protection is how people are hurt doing this.
Can I fix it myself?
Light soiling, yes. Wipe spills while the oven is still warm, not cold. On moderate build-up, a bicarbonate of soda paste left overnight and then lifted softens a surprising amount without caustics. If you use a proprietary oven cleaner, wear gloves and eye protection, ventilate the kitchen, and follow the dwell time rather than scrubbing early. Never spray caustic cleaner onto a catalytic or pyrolytic liner, an aluminium part or the fan element, and never use a wire brush or a scouring pad on enamel or the door glass.
When should you call a cleaner?
Call a cleaner who does ovens specifically when the carbon has hardened, when the door glass is dirty between the panes, or when you want it done without caustics in your kitchen. Professional oven cleaning takes the door apart, removes the racks, runners, fan cover and often the inner glass, and dip-tanks them off-site. Call an appliance repair engineer instead if the oven smokes heavily when heating, will not reach temperature, or the fan sounds wrong — that is a fault, not soiling.
What will the cleaner actually do?
- Dismantle the door, racks, runners, fan cover and inner glass so the surfaces can actually be reached
- Dip-tank the removable parts rather than scrubbing carbon inside your kitchen
- Soften polymerised carbon in the cavity with a controlled dwell rather than abrasion, protecting the enamel
- Clean between the door glass panes and refit the seal correctly
- Clean the grill, grill pan, hob rings, pan supports and extractor filters that recontaminate the oven
- Flag a damaged catalytic liner, perished door seal or scorched element as a repair rather than cleaning over it
